Apple-Raisin-Rice Salad

1 cup Rice
1/2 cup Golden Raisins
2 Tbsp Vinegar
1/2 cup Salad Oil
1 tsp thyme leaves (crumbled)
1 large  Eating apple -cored and slivered (peeled if desired)
2 Tbsp Lemon Juice
2/3 cup Black Olives (chopped)
  Salt
1 cup Cheddar or Gruvere Cheese  (diced)

 

  1. Cook rice according to package directions.

  2. Soak raisins in boiling water 5 minutes; drain.  

  3. Mix rice and raisins with combined vinegar, oil, and thyme.  

  4. Sprinkle apples with lemon juice and stir gently into rice mixture.

  5. Add olives, season with salt to taste, and chill.

  6. Just before serving add cheese.

Makes 6 servings.
