Pork Roast and Sauerkraut

3 Jars Sauerkraut

3-4 pound Pork Roast

4 strips of Bacon (optional)

2-3 cloves whole garlic sliced in half or quartered

 

                                                                                                                           

  1. Insert garlic cloves inside pork roast at various places over roast.

  2. Brown roast on stove top in a little canola or corn oil.

  3. Spray bottom of roasting pan with non-stick cooking spray and place strips of bacon on the bottom

  4. Cover with about 1/2 of the sauerkraut and add pork roast then the rest of the sauerkraut.

  5. Cook on stove top on LOW for about 1/2 hour then move to oven set at 325º and finish cooking for about 3 hour.

Cook bone in pork about 20 minutes per pound and boneless about 25 minutes per pound.  Using a meat thermometer the internal temperature should be about 150º before resting. 

For a delicious alternative chop one medium onion and apple and add to top of sauerkraut before baking.
