Deep Fried Chicken & Macaroni Salad

  Pieces of Chicken (We use Chicken Things)

  1 1/2 cup

  Elbow Macaroni

  8

  Hard Boiled Eggs

  1/2

  Chopped Small Onion

  1/2 cup

  Green Olives with Pimentos

  3 - 4

  Medium Sized Dill Pickles

  2 cups

  Real Mayo (Helmann's or Best Foods) use more or less if needed

 

  Salt and Pepper to taste

 

  1.  Wash and thoroughly dry chicken pieces.

  2.  Preheat oil in deep fryer for 5 minutes. This is important to sear the meat

  3.  Add chicken to oil and cook for 17 to 19 minutes. Chicken will be a golden brown.

  4.  When done cool on wire rack so grease can drain.  

  WHILE CHICKEN IS COOKING

  4.  Boil Macaroni according to directions. Also Boil eggs

  5.  Chop the olives, onions, and pickles and place in large bowl

  6.  Cool eggs and Macaroni with ice cold water if serving immediately 

  7.  Add cooled macaroni and  sliced hard boiled eggs.

  8.  Add Mayonnaise and salt and pepper to taste.
