Grilled Peach Sundaes with Blackberry Sauce

2/3 cup Blackberry Jam
1/3 cup Orange Juice
4 firm-ripe Peaches or Nectarines
1 container French Vanilla Ice Cream

 

  1. Prepare barbecue grill by cleaning grates thoroughly and coating the grill with a light coat of oil.  (for CHARCOAL GRILLS heat coals first without the grate and coat the grate with oil and add to grill - For GAS GRILLS when hot brush a light coat of oil on grates.  

  2. In a small bowl mix jam and orange juice.  Halve and pit peaches or nectarines using s short sharp knife around the pit to remove it.

  3. Lay the peach or nectarines cut side down on lightly oiled grill over a medium high grill (you can hold your hand just above the grill for only 3 - 4 seconds)

  4. IF using a CHARCOAL GRILL  do not close the lid, if using a GAS GRILL close the lid.  

  5. Cook until cut edges begin to turn brown (about 2 - 4 minutes), then turn peaches over with tongs.  

  6. Spoon about 1 tsp of the blackberry jam mix into hollow center of peaches or nectarines and continue to cook until fruit is hot (about 3 - 5 minutes) longer.  

  7. Spoon a scoop if ice cream into 4 dessert bowls and with tongs set peach halves in each bowl.  Drizzle with remaining blackberry jam mixturn and serve.  

Serves 4 - Substitute your favorite jam mixture for a variety of flavors.
