Sweet Potato Shepherd's Pie 

4c. cooked sweet potatoes, pureed
2 eggs, beaten
1/4 c. flour
2 TBSP oil
1 lb. each ground lamb and ground beef or pork
2 c. beef stock
1 c. each finely chopped diced onion and celery
1 TBSP each thyme, rosemary, and minced garlic
3 tsp. flour
1 c. frozen peas (optional)

 

Mix together sweet potatoes, eggs, and 1/4 cup flour.  Cover and set aside.  

On medium heat, saute the meat in 2 TBSP oil.  Drain fat from meat and return to pan.  

Add stock, vegetables, and herbs.  Simmer for three minutes.  

Blend in 3 TBSP flour.  Stir in frozen peas, if desired.  

Transfer to a 2-quart casserole. 

Spread sweet potato mixture evenly over meat mixture.  Score top with fork.  

Bake at 400 degrees for 45 minutes.  Cool five minutes before serving.
